Maple syrup is made from the sap of the maple tree during a brief time every spring when there are freezing nights and warm days. To produce one gallon of maple syrup about forty gallons of sap must be collected. The maple trees from which the sap is gathered average around 50 years of age. The sap is boiled, causing only the water to evaporate. The remaining liquid becomes more and more concentrated, leaving the wonderful sweetness and minerals of the maple tree.
